PDO-protected alpine cheese from Vorarlberg, distinct from Vorarlberger Bergkase. Made exclusively on alpine pastures during summer (June to September) from raw milk of cows grazing above 1000m. The alpine flora gives it a more intense flavor than valley cheeses.
