Traditional herbed cheese from Van province in eastern Turkey. Made from sheep milk mixed with wild mountain herbs (otlu) including sirmo, heliz, and mendo, which grow in the high-altitude meadows around Lake Van. Aged in brine, it is deeply aromatic.
