One of Norway's oldest and most traditional cheeses, meaning "old cheese." Made from soured skimmed milk ripened with Mucor mold. Nearly fat-free but extremely protein-rich. A distinctly Norwegian cheese now produced mainly by TINE in Vik, a Slow Food Presidium.
